Another meat free meal and this Greek dish is one of my all time favourites! The main ingredient is spinach or, my preference, silverbeet. I find that the silverbeet is meatier, more textured. There are many benefits to the leafy greens such as vitamins C, K, and B, and minerals including folic acid, calcium, iron, selenium, zinc, manganese, magnesium, potassium, beta-carotene and antioxidants.
