Vegetable Frittata

Humans are responsible for wasting an average of 200kgs of food per year. Being smarter about how much food we purchase will decrease this amount of wastage.

Planning meals for the week and adhering to that amount is a good start. Being creative about what is in the fridge is another. I hate wasting vegetables and have a great solution when there’s leftovers that are on their way out.


Any vegetables in the fridge – Potato, Sweet Potato, Pumpkin, Carrot, Zucchini, Broccoli
5 Eggs
Parmesan cheese
Salt and pepper

Pre heat oven to 160C. Par boil any starchy vegetable, like potatoes and pumpkin. Slice thickly and layer one vegetable at a time in a greased baking tray.  Grate raw carrot and zucchini and layer each on top. Place thinly sliced broccoli in tray. Cut some fresh herbs and sprinkle on top. Salt and pepper to taste.

Beat eggs and parmesan until fluffy and pour over vegetables. Place in oven on 160C for about 40 mins. Slice and serve hot or cold.
