Tomato Tarts

With the meat industry causing more greenhouse gases than all forms of transport on earth, there are a million reason to go meat free.

Even if it is just for one day or at the very least one meal.

Below is a great recipe for tomato tarts that makes a starter that will impress your guests or a quick snack for you and the family.


1 1/2 sheets (25 x 25cm) ready-rolled frozen butter puff pastry, just thawed
Olive oil
50g soft Fetta
2 x 250g punnets cherry tomatoes
50g shredded parmesan
5 sprigs of thyme

Preheat oven to 220°C. Place puff pastry on oven trays and brush with olive oil.

Neatly place the cherry tomatoes on pastry and sprinkle with parmesan and fetta. Sprinkle with leaves of thyme and place a few whole sprigs on tart. Drizzle with a little olive oil and salt .

Place the tart in oven and bake for 20 minutes or until golden brown and puffed.

Remove from oven and set aside for 3-5 minutes to cool slightly. Cut into rectangles and serve.
